12. POPPY SEED BAGELS

Poppy Seed Bagels are super-soft, flavorful, and topped with crunch poppy seeds. They’re really addictive too, you’ll wonder why you hadn’t baked them sooner.

Servings: 6 bagels

Prep Time: 1 hr. 30 mins

Cook Time: 30 mins

Ingredients:

425g bread flour

275ml water

3 tbsp. almond milk (or any other non-dairy milk)

7g sachet fast-action yeast

2 tbsp. caster sugar

2 tbsp. poppy seeds

1 tbsp. bicarbonate of soda

1 tbsp. vegetable oil

1 tsp. rice malt syrup

1 tsp. salt

Directions:

1) In a large bowl, combine the bread flour, yeast, sugar, salt, and water.

2) Once all the ingredients are well mixed, cover with oiled cling film and prove for 1 hour, until the dough is doubled in size

3) As you wait for the dough to prove, pre-heat the oven to 180 degrees Celsius oven fan on, and prepare a baking sheet by lightly coating with vegetable oil.

4) Once the dough has doubled in size, scrape the dough onto a lightly floured surface and cut into equal sized rolls.

5) Roll each piece of dough into a ball, and then form a hole in the middle of each dough piece with your finger, to form the traditional ring bagel shape.

6) In a large stock pot, stir in the bicarbonate of soda and fill with boiling water.

7) Taking the bagel dough rings, cook in the boiling water for 40 seconds, then flip over, and cook for another 40 seconds. Once done place the bagels onto the prepared oiled baking sheet.

8) You may need to work in batches or even use 2 baking sheets.

9) Mix the almond milk and rice malt syrup in a small bowl and using a pastry brush, glaze the cooked bagels with this mixture. Sprinkle the poppy seeds on top of each bagel,

10) Bake for 25-30 minutes, until light and golden.

11) Remove from the oven and cool on a wire rack.

12) Serve warm with cream cheese. Delicious!
